Join Tyson Foods on March 11th - March 13th for the 2022 Beyond Fresh Meat Short Course at Tyson Food’s Discovery Center in Downer Grove, Illinois!
Participants will get an in-depth, hands-on experience in the dinner sausage category. You will also have- the opportunity to broaden your technical skill set while gaining an understanding of what R&D food scientists do every day.

Natural casing, co-extrusion, skinless dinner sausage processing
How to formulate with fat target, salt targets, label constraints and claim adherence
Developing with Intent
Cross-functional collaboration with FSQA, Regulatory, Procurement, and Marketing
Product design process (stage-gate, innovation vs optimization)

Applications will be reviewed and the 50 individuals selected will be contact by AMSA staff to pay their $50 registration fee prior to the course.
